Picnic Favourites

Whether you’re a beach-goer; or you prefer a shady botanical garden or even just your own back garden – we can all agree that this is the time to take advantage of eating outdoors.

Without quite meaning to, we’ve slid into picnic food territory lately. This realisation had us examining which other recipes we’ve created over the last few months which are simple and fuss-free enough to throw together on a sunshine-whim when you want to grab your picnic blanket and go go go.

As I type this, its 34 degrees Celsius, with little hope of letting up until the end of March. We’ve compiled a list of our picnic suggestions without a salad because the prevalent South Easter might blow your leaves away (or at least that’s the excuse we’re using). We always take along ample water, some raw nuts and sunblock; but these five items are fast becoming musts on our lists.

1 – Christmas Cocktail

We know it’s a recent recipe, but we can’t emphasize enough just how refreshing this sparkling gin and grapefruit cocktail is. You can either premix it at home or take the components along with you. We won’t judge – just make sure you don’t run out!

2 – One-Pot Mexican Veg

Maybe a little unorthodox, but this One-Pot Mexican Veg with crispy, salty nachos from UCOOK is too good not to bring along. What’s better at a picnic than a dish you don’t need utensils for? You can whip the veg and beans up the night before and refrigerate it until you’re adventure-ready.

3 – Easy Vegan Tzatziki

Still have a few nachos leftover? Or maybe a friend brought some crudités? Neither? This Vegan Tzatziki is so fresh and creamy, we’d eat it with a spoon anyway. Seal it in an airtight container, give it a stir and you’re ready to dip. The best part is, even if you can’t keep it completely cool, you don’t have to panic about any off-dairy issues!

Perhaps the rule of picnic food should be that it improves overnight? That’s definitely true for this Three Bean Salad. Beans provide countless health benefits, and they fit into several different food groups, and aside from containing an array of vitamins, minerals and antioxidants they pack a pretty punch in the protein category. They’ll give you the energy for countless beach-bats matches and rematches!

5 – Super Green Sandwich

Maybe you’re more of a classic on-the-go type of eater? A good ol’ sandwich just hits the spot sometimes. With slathers of avo and homemade basil pesto, you’ll definitely want to find a dreamy spot with a nice view to enjoy this one.

6 – Cacao Protein Balls

Remember these? Ah, our first recipe – our first lovechild. These Cacao Protein Balls hold a special place in our hearts for a good reason. Filled with wholesome, unprocessed ingredients, they’re the best convenience snack you can take along. And they’ll quieten any sweet tooth in the process! You can make these in large batches and keep them on hand for any occasion – even a day at work.
